Weekend Roundup, Vol. 7

1. Is it sad that this is how most of my breakfasts look like at work?  I usually have oatmeal, but I just didn't have time to pick some up this week.

 2. An old coworker turned me to chia seeds.  I've been trying to find them at Trader Joe's and Whole Foods for a while with no luck.  I was really excited to try this, but thought it was really just meh.

 3. Breaking out the wine stash because I've been cooking a lot.

 4. Saturday night dinner.  I was really proud of this one. First, I rubbed the chicken with Spanish salt we bought in Canada. Then I used the gizzards and some vegetables to make a stock to baste it with.  While it sat in a bag to marinate in the stock, I stuffed its cavity with lemon, onions and carrots.  I'm happy to report that the entire chicken was finished.  I also made brussel sprouts with mushrooms and pancetta. The bread was more of a carb-filler if anyone was still hungry.

5. R complained of a sore throat, so I took the opportunity to make some chicken noodle soup. I used the leftover chicken carcass from above to make the soup stock with carrots, onions, and celery.  Since I only needed half of what I made, I froze the rest.
